Brunch Recipe: Baked Cheddar, Eggs, and Cheese

With the upcoming trip to Tahoe this week, I was tasked with coming up with an easy brunch recipe for everyone so we wouldn’t have to go out to eat every day. I found a simple recipe that will feed four, which can be thrown together quickly and is super simple! I’ve tried it out, and I’m a fan, so I think it will go over well—plus, the ingredients are easy, and it only takes thirty minutes to make.  

Ingredients

Five large eggs

1 ½ pouds of red potatos (chopped)

½ cup shredded cheddar cheese

2 garlic cloves (minced)

3 tbsp butter

Salt and peper to taste

Directions

  1. Preheat the oven to 400°
  2. In a skillet, heat the butter until melted over medium heat
  3. Add in the chopped potatoes, cook and stir until golden brown and tender
  4. Add in the garlic, salt and pepper
  5. Make four spaces in the skillet by pushing the potatoes to the side, and break five eggs in each space
  6. Remove from heat and place in the oven, bake for 9 to 11 minutes (or until the egg whites are set and the yolks have started to thicken up, but have not become hard)
  7. Remove from oven and sprinkle the cheese across the top, bake for 1 minute or until the cheese has melted.
